Ingredients

  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup corn
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until soft.
  3. Stir in garlic and cook for 1 minute.
  4. Add vegetable broth and potatoes. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add green beans and corn. Cook for another 5 minutes.
  7. Stir in heavy cream and season with salt and pepper.
  8. Simmer for an additional 5 minutes.
  9. Garnish with fresh parsley before serving.
