A simple and delicious one pot creamy vegetable soup.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups potatoes, diced
- 1 cup green beans, chopped
- 1 cup corn
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until soft.
- Stir in garlic and cook for 1 minute.
- Add vegetable broth and potatoes. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add green beans and corn. Cook for another 5 minutes.
- Stir in heavy cream and season with salt and pepper.
- Simmer for an additional 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- Use any seasonal vegetables you have on hand.
- Adjust the consistency by adding more or less broth.
- This soup can be stored in the fridge for up to 3 days.
