A simple and flavorful one pot orzo dish that combines pasta with fresh vegetables and herbs.
Ingredients

- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, sauté until translucent.
- Add cherry tomatoes and cook for 2-3 minutes.
- Stir in orzo, vegetable broth, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in spinach and cook until wilted.
- Serve hot.
Notes
- Feel free to add other vegetables.
- For added protein, include cooked chicken or beans.
- Store leftovers in the fridge for up to 3 days.
