- 1 cup long-grain rice
- 1 pound ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 can diced tomatoes with green chilies
- 2 cups beef or vegetable broth
- 1 cup shredded cheese
- Chopped cilantro for garnish
Instructions
- In a large pot, brown the ground beef or turkey over medium heat.
- Add the taco seasoning and stir for 1 minute.
- Add the rice, black beans, corn, diced tomatoes, and broth.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes or until rice is cooked.
- Stir in the cheese until melted.
- Garnish with cilantro before serving.
Notes
- Use any ground meat or a plant-based alternative.
- Adjust the spice level by adding jalapeños if desired.
- Serve with sour cream or avocado for extra flavor.
