A hearty and flavorful one-pot dish combining white chicken chili and pasta.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 can diced green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups pasta (any shape)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté onions and garlic until soft.
- Add chicken breasts and cook until browned.
- Stir in green chilies, beans, corn, and spices.
- Add chicken broth and bring to a boil.
- Add pasta and cook until al dente.
- Shred chicken in the pot and mix well.
- Top with cheese and let it melt.
- Garnish with cilantro before serving.

- Adjust spice level to your preference.
- Can substitute chicken with turkey or plant-based protein.
- Store leftovers in the refrigerator for up to three days.
