- 2 salmon fillets
- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add garlic and sauté until fragrant.
- Add orzo and toast for 1-2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until orzo is cooked, about 10 minutes.
- Stir in lemon juice and zest.
- Push orzo to the side and place salmon fillets skin-side down in the skillet.
- Cook salmon for about 6-8 minutes until cooked through.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
