- 3 large eggs
- 1 tablespoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×4 inch loaf pan with butter and dust with flour.
- In a large bowl, whisk together flour, baking powder, and salt.
- In another bowl, rub the orange zest into the sugar until light orange in color. Then add oil, eggs, fresh orange juice, and vanilla extract. Whisk until combined.
- Pour the wet mixture into the dry ingredients and gently whisk until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
- Bake for 1 hour and 10 minutes, or until a toothpick comes out clean. If the top browns too quickly, cover loosely with foil.
- Let the cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
- While the cake cools, prepare the glaze by whisking together powdered sugar, orange zest, and orange juice until smooth.
- Once the cake is cool, drizzle the glaze over the top. Let it set for 30 minutes before serving.
Notes
- Do not overmix the batter, as this can make the cake dense.
- Fresh oranges give the best flavor, but you can use store-bought juice in a pinch.
- If the cake top browns too fast, cover it with foil to prevent burning.
- For a stronger orange flavor, add extra zest or juice in moderation.
