  • 3/4 cup fresh orange juice (from about 3 oranges)
  • 3 large eggs
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×4 inch loaf pan with butter and dust with flour.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, rub the orange zest into the sugar until light orange in color. Then add oil, eggs, fresh orange juice, and vanilla extract. Whisk until combined.
  4. Pour the wet mixture into the dry ingredients and gently whisk until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
  6. Bake for 1 hour and 10 minutes, or until a toothpick comes out clean. If the top browns too quickly, cover loosely with foil.
  7. Let the cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
  8. While the cake cools, prepare the glaze by whisking together powdered sugar, orange zest, and orange juice until smooth.
  9. Once the cake is cool, drizzle the glaze over the top. Let it set for 30 minutes before serving.

Notes

  • Do not overmix the batter, as this can make the cake dense.
  • Fresh oranges give the best flavor, but you can use store-bought juice in a pinch.
  • If the cake top browns too fast, cover it with foil to prevent burning.
