- 6 small flour tortillas
- 6 large eggs
- 1 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/2 cup cooked sausage or bacon
- 1/4 cup chopped green onions
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Cooking spray
Instructions
- Preheat your oven to 350°F (175°C).
- Spray a baking dish with cooking spray.
- In a bowl, whisk together the eggs, salt, and pepper.
- Stir in the cheese, bell peppers, sausage or bacon, and green onions.
- Place tortillas in the baking dish and fill each with the egg mixture.
- Bake for 20-25 minutes or until the eggs are set.
- Remove from the oven and let cool for a few minutes before serving.
