- 4 chicken thighs
- 2 cups of rice
- 4 cups of chicken broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe pan, heat olive oil over medium heat.
- Season chicken thighs with salt, pepper, and paprika.
- Brown the chicken thighs in the pan for about 5 minutes on each side.
- Add chopped onion and minced garlic, cooking until soft.
- Add rice to the pan, stirring well.
- Pour in chicken broth and bring to a simmer.
- Cover the pan with a lid or foil and transfer to the oven.
- Bake for 30-35 minutes, or until chicken is cooked through and rice is tender.
Notes
- You can substitute chicken thighs with breasts if preferred.
- Add vegetables like peas or carrots for extra nutrition.
- Let the dish rest for 5 minutes before serving.
