- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese
- 8 small corn tortillas
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix spinach, black beans, corn, cumin, chili powder, and salt.
- Warm tortillas in a skillet for a few seconds on each side.
- Fill each tortilla with the spinach mixture and sprinkle cheese on top.
- Place the filled tortillas in a baking dish and drizzle with olive oil.
- Bake for 15-20 minutes until the tortillas are crispy and the cheese is melted.
- Serve hot.
