- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and halve the baby potatoes.
- In a bowl, mix potatoes with olive oil, salt, pepper, garlic, and rosemary.
- Spread the potatoes on a baking sheet in a single layer.
- Roast for 25-30 minutes, turning halfway through.
- Remove from the oven and serve hot.
Notes
- For extra crispiness, do not overcrowd the baking sheet.
- You can substitute rosemary with thyme or parsley.
