Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 cup cooked breakfast sausage, crumbled
- 1/2 cup shredded cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/4 cup sour cream
Instructions
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, egg, and melted butter.
- Add wet ingredients to dry ingredients and stir until combined.
- Heat a non-stick skillet over medium heat.
- Pour 1/4 cup batter into the skillet for each pancake.
- Cook until bubbles form, then flip and cook until golden.
- Place pancakes on a plate and fill with sausage, cheese, tomatoes, and green onions.
- Top with sour cream and serve.

- Use sweet or savory toppings as desired.
- Adjust the thickness of batter with milk.
- Consider using whole wheat flour for a healthier option.
