Instructions
- Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar, then press into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then cool.
- Beat cream cheese and peanut butter until smooth. Add powdered sugar and vanilla, then mix until creamy. Add eggs one at a time, mixing well after each addition.
- Whip heavy cream until soft peaks form, then fold into the peanut butter mixture.
- Pour the filling into the cooled crust, smoothing the top. Bake at 325°F (160°C) for 50-60 minutes, until edges are set and center is slightly jiggly. Cool gradually in the oven for 1 hour.
- Chill in the refrigerator for at least 4 hours or overnight. Top with chocolate chips or whipped cream before serving.
