  • 1 cup (250g) peanut butter (smooth or chunky)
  • 1/2 cup (100g) brown sugar, lightly packed
  • 1/2 cup (100g) granulated sugar
  • 1 tsp (5mL) vanilla extract
  • 1 large egg, room temperature
  • 3/4 tsp (3g) baking powder

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, sift the flour and baking powder together, then whisk to combine.
  3. Cream the butter and both sugars (granulated and brown) in a stand mixer with a paddle attachment, or use a hand mixer until the mixture is light and creamy.
  4. Add the peanut butter and mix until incorporated.
  5. Add the egg and vanilla extract to the mixture and beat on low speed until well combined.
  6. Gradually add the flour mixture to the wet ingredients and mix until just incorporated. Be careful not to overmix the dough.
  7. Roll the dough into 1-inch balls and place them onto the prepared baking sheet.
  8. Using a fork, gently press down on each dough ball in a criss-cross pattern to flatten the cookies.
  9. Bake for 9-11 minutes, or until the edges are golden brown. The centers should remain soft.
  10. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
