- 1 tsp (5mL) vanilla extract
- 1 large egg, room temperature
- 3/4 tsp (3g) baking powder
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a medium bowl, sift the flour and baking powder together, then whisk to combine.
- Cream the butter and both sugars (granulated and brown) in a stand mixer with a paddle attachment, or use a hand mixer until the mixture is light and creamy.
- Add the peanut butter and mix until incorporated.
- Add the egg and vanilla extract to the mixture and beat on low speed until well combined.
- Gradually add the flour mixture to the wet ingredients and mix until just incorporated. Be careful not to overmix the dough.
- Roll the dough into 1-inch balls and place them onto the prepared baking sheet.
- Using a fork, gently press down on each dough ball in a criss-cross pattern to flatten the cookies.
- Bake for 9-11 minutes, or until the edges are golden brown. The centers should remain soft.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
