A simple and delicious recipe for peanut butter Easter eggs.
Ingredients

- 1 cup peanut butter
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a bowl, mix peanut butter and softened butter until smooth.
- Add powdered sugar and vanilla extract. Mix until well combined.
- Shape the mixture into egg shapes and place on a baking sheet.
- Chill in the refrigerator for 30 minutes.
- Melt chocolate chips and coconut oil in a microwave or double boiler.
- Dip each peanut butter egg into the melted chocolate.
- Place back on the baking sheet and let the chocolate set.
Notes
- Store in an airtight container.
- Use dark or milk chocolate based on preference.
- Can add sprinkles on top for decoration.
