A simple vegan recipe for peanut butter noodles.
Ingredients

- 8 oz noodles
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp maple syrup
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1/4 cup water
- 1 cup mixed vegetables
- Green onions for garnish
Instructions
- Cook the noodles according to package instructions.
- In a bowl, mix peanut butter, soy sauce, maple syrup, sesame oil, garlic, ginger, and water.
- Heat a pan and add mixed vegetables, sauté until tender.
- Add cooked noodles and sauce to the pan, toss to coat.
- Serve hot, garnished with green onions.
Notes
- You can use any type of noodles.
- Adjust the sauce ingredients to taste.
- Add tofu for extra protein.
