Description
A moist and flavorful tea cake made with pears and almond flour, perfect for afternoon tea or dessert.

- 150 grams (1 cup) all-purpose flour
- 150 grams (3/4 cup) granulated sugar
- 100 grams (1/2 cup) unsalted butter, softened
- 2 large eggs
- 100 grams (1 cup) almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon almond extract
- 2 ripe pears, peeled, cored, and thinly sliced
- 2 tablespoons apricot jam (for glaze)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 180°C (350°F). Grease and line a round 9-inch (23 cm) cake pan with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, mixing well after each addition. Add the almond extract and mix until combined.
- In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Gently fold in half of the sliced pears into the batter, reserving the other half for the top of the cake.
- Pour the batter into the prepared cake pan and smooth the top with a spatula. Arrange the remaining pear slices on top in a decorative pattern.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, heat the apricot jam in a small saucepan over low heat until melted. Remove from heat.
- Once the cake is done, let it cool in the pan for about 10 minutes, then transfer to a wire rack. Brush the melted apricot jam over the top for a shiny glaze.
- Once completely cool, dust with powdered sugar if desired. Slice and serve with tea or coffee.
Notes
- For added flavor, consider adding a handful of sliced almonds on top before baking.
- This cake can be stored in an airtight container at room temperature for up to three days or in the refrigerator for up to a week.
- Pair with whipped cream or a scoop of vanilla ice cream for an extra indulgent dessert.
