  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (50g) almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup (60ml) milk
  • Sliced almonds (for topping, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a small bowl, toss the thinly sliced pears with a tablespoon of brown sugar and set aside.
  3. In a large mixing bowl, cream together the softened butter and remaining brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until combined.
  5. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, salt, and cinnamon.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  7. Gently fold in half of the sliced pears into the batter.
  8. Pour the batter into the prepared cake pan and smooth the top. Arrange the remaining pear slices on top and sprinkle sliced almonds if desired.
  9. Place the cake in the oven and bake for 40-45 minutes, or until a toothpick comes out clean.
  10. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
