Description

A moist and flavorful cake featuring ripe pears, maple syrup, and almond flour.

Ingredients

Scale
  • 2 medium ripe pears, peeled, cored, and thinly sliced
  • 1/2 cup (120 ml) maple syrup
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (50 g) almond flour
  • 1/2 cup (120 ml) milk
  • 1/4 cup (30 g) slivered almonds (for topping)
  • Additional maple syrup (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a small bowl, toss the thinly sliced pears with a tablespoon of maple syrup to coat them lightly. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In another bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
  7. Gently fold in the prepared pear slices into the batter, ensuring they are evenly distributed.
  8. Pour the batter into the prepared cake pan, smoothing the top with a spatula. Arrange any remaining pear slices on top of the batter for decoration.
  9. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean. The cake should be golden brown.
  10. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, drizzle with additional maple syrup for a glossy glaze.
  11. Before serving, sprinkle the top with slivered almonds for added crunch. Slice and enjoy this moist and flavorful cake with a cup of tea or coffee.

Notes

  • For added flavor, you can toast the slivered almonds in a dry skillet over medium heat until golden brown before adding them to the cake.
  • This cake can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
  • Serve with whipped cream or a scoop of vanilla ice cream for a delightful dessert experience.
