Description
A moist and flavorful cake featuring ripe pears, maple syrup, and almond flour.
Ingredients
Scale
- 2 medium ripe pears, peeled, cored, and thinly sliced
- 1/2 cup (120 ml) maple syrup
- 1/2 cup (115 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (190 g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (50 g) almond flour
- 1/2 cup (120 ml) milk
- 1/4 cup (30 g) slivered almonds (for topping)
- Additional maple syrup (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a small bowl, toss the thinly sliced pears with a tablespoon of maple syrup to coat them lightly. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
- Gently fold in the prepared pear slices into the batter, ensuring they are evenly distributed.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula. Arrange any remaining pear slices on top of the batter for decoration.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean. The cake should be golden brown.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, drizzle with additional maple syrup for a glossy glaze.
- Before serving, sprinkle the top with slivered almonds for added crunch. Slice and enjoy this moist and flavorful cake with a cup of tea or coffee.
Notes
- For added flavor, you can toast the slivered almonds in a dry skillet over medium heat until golden brown before adding them to the cake.
- This cake can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
- Serve with whipped cream or a scoop of vanilla ice cream for a delightful dessert experience.
