- 3 ripe pears, peeled, cored, and sliced
- 1/2 cup unsalted butter (115 g), divided
- 1 cup brown sugar (200 g)
- 1 cup all-purpose flour (125 g)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup granulated sugar (100 g)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk (120 ml)
Instructions
- Preheat your oven to 350°F (175°C). In a medium saucepan, melt 1/4 cup (60 g) of the butter over medium heat. Stir in the brown sugar until dissolved. Pour the mixture into a 9-inch (23 cm) round cake pan, spreading it evenly.
- Lay the sliced pears in a circular pattern on top of the brown sugar mixture in the cake pan. Set aside.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the remaining 1/4 cup (60 g) of softened butter with the granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs, one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.
- Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.
- Carefully pour the batter over the arranged pears in the cake pan, spreading it evenly.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Allow the cake to cool in the pan for about 10 minutes. Run a knife around the edges to loosen it, and carefully invert the cake onto a serving plate. Let it cool slightly before serving.
- Slice the cake and serve warm or at room temperature. It pairs beautifully with whipped cream or vanilla ice cream.
Notes
- Make sure the pears are ripe but firm to hold their shape during baking.
- You can add a pinch of cinnamon or nutmeg to the batter for added flavor.
- Store any leftovers in an airtight container at room temperature for up to 2 days.
