Description

A moist and flavorful cake featuring caramelized pears on top.

Ingredients

Scale
  • 3 ripe pears, peeled, cored, and sliced
  • 1/2 cup unsalted butter (115 g), divided
  • 1 cup brown sugar (200 g)
  • 1 cup all-purpose flour (125 g)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar (100 g)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (120 ml)

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium saucepan, melt 1/4 cup (60 g) of the butter over medium heat. Stir in the brown sugar until dissolved. Pour the mixture into a 9-inch (23 cm) round cake pan, spreading it evenly.
  2. Lay the sliced pears in a circular pattern on top of the brown sugar mixture in the cake pan. Set aside.
  3. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  4. In a large mixing bowl, beat the remaining 1/4 cup (60 g) of softened butter with the granulated sugar until light and fluffy, about 3-4 minutes.
  5. Beat in the eggs, one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.
  6. Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.
  7. Carefully pour the batter over the arranged pears in the cake pan, spreading it evenly.
  8. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  9. Allow the cake to cool in the pan for about 10 minutes. Run a knife around the edges to loosen it, and carefully invert the cake onto a serving plate. Let it cool slightly before serving.
  10. Slice the cake and serve warm or at room temperature. It pairs beautifully with whipped cream or vanilla ice cream.

Notes

  • Make sure the pears are ripe but firm to hold their shape during baking.
  • You can add a pinch of cinnamon or nutmeg to the batter for added flavor.
  • Store any leftovers in an airtight container at room temperature for up to 2 days.
