A delicious cake made with fresh pears, vanilla, and almond flour.

- 2 ripe pears, peeled and thinly sliced
- 1 cup (200 g) granulated sugar
- 1/2 cup (115 g) unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (120 g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (50 g) almond flour
- 1/4 cup (30 g) slivered almonds (for topping)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
- Peel and thinly slice the pears. Set aside a few slices for decorating the top of the cake.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and almond flour.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Gently fold in the thinly sliced pears, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared cake pan. Smooth the top with a spatula and arrange the reserved pear slices on top in a decorative pattern. Sprinkle the slivered almonds over the top.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the cake is golden brown.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Once cooled, dust the top with powdered sugar if desired. Slice and serve the cake warm or at room temperature. Enjoy it with a cup of tea or coffee!
Notes
- For added flavor, you can sprinkle a little cinnamon over the pears before baking.
- This cake can be stored in an airtight container at room temperature for up to 3 days.
