  • 1 cup (200 g) granulated sugar
  • 1/2 cup (115 g) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (120 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (50 g) almond flour
  • 1/4 cup (30 g) slivered almonds (for topping)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Peel and thinly slice the pears. Set aside a few slices for decorating the top of the cake.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until combined.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and almond flour.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  7. Gently fold in the thinly sliced pears, ensuring they are evenly distributed throughout the batter.
  8. Pour the batter into the prepared cake pan. Smooth the top with a spatula and arrange the reserved pear slices on top in a decorative pattern. Sprinkle the slivered almonds over the top.
  9. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the cake is golden brown.
  10. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  11. Once cooled, dust the top with powdered sugar if desired. Slice and serve the cake warm or at room temperature. Enjoy it with a cup of tea or coffee!
