A rich and moist pound cake infused with the flavors of pecan pie.
Ingredients

- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 1 cup pecan pie filling
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour a bundt pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the creamed mixture, alternating with buttermilk.
- Stir in the vanilla extract and chopped pecans.
- Pour half of the batter into the prepared pan.
- Spread the pecan pie filling over the batter.
- Top with the remaining batter.
- Bake for 60-70 minutes or until a toothpick inserted comes out clean.
- Let cool for 10 minutes in the pan, then invert onto a wire rack to cool completely.
Notes
- Store leftovers in an airtight container.
- Use fresh pecans for best flavor.
- Serve with whipped cream or ice cream if desired.
