Description
A fresh and flavorful pasta salad inspired by Mexican street corn.
Ingredients

- 8 oz elbow macaroni
- 2 cups corn (fresh or frozen)
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/4 cup chopped fresh cilantro
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 lime (juiced)
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package instructions. Drain and let cool.
- In a large bowl, combine corn, red onion, bell pepper, and cilantro.
- In a separate bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Add the cooled macaroni to the vegetable mixture.
- Pour the dressing over the pasta and mix well.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For extra flavor, grill the corn before adding.
- Adjust spices according to your taste.
