- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, chopped
- 4 carrots, cut into chunks
- 3 potatoes, cut into quarters
- 2 cups beef broth
- 2 sprigs fresh thyme
- 1 bay leaf
Instructions
- Preheat your oven to 325°F (163°C).
- Season the chuck roast with salt and pepper.
- Heat olive oil in a large pot over medium-high heat.
- Sear the roast on all sides until browned.
- Add onion, carrots, and potatoes to the pot.
- Pour in beef broth and add thyme and bay leaf.
- Cover the pot and transfer it to the oven.
- Cook for 3 to 4 hours, until the meat is tender.
- Remove from oven and let rest before slicing.
Notes
- For extra flavor, add garlic or mushrooms.
- Use a meat thermometer for perfect doneness.
- Leftovers are great for sandwiches.
