Ingredients

- 2 cups of rice
- 1 whole chicken, cut into pieces
- 4 cups of chicken broth
- 1 bunch of cilantro
- 1 jalapeño, seeded
- 4 cloves of garlic
- 1/2 cup of olive oil
- 1 tablespoon of lime juice
- Salt to taste
Instructions
- Cook the rice in chicken broth until tender.
- In a blender, combine cilantro, jalapeño, garlic, olive oil, lime juice, and salt. Blend until smooth.
- Season the chicken pieces with salt.
- In a large pan, cook the chicken until golden brown and fully cooked.
- Serve the chicken over rice and drizzle the green sauce on top.
Notes
- Adjust the spice level by adding more or less jalapeño.
- For extra flavor, marinate the chicken in the green sauce for a few hours before cooking.
