Instructions

- In another bowl, whisk milk and egg together.
- Add the wet ingredients to the dry ingredients and mix until combined.
- Fold in the diced pineapple.
- Heat oil in a frying pan over medium heat.
- Spoon batter into hot oil, frying until golden brown on both sides.
- Remove and drain on paper towels.
- Serve warm with powdered sugar, if desired.
