- 1 pound ground beef
- 1 cup pinto beans, soaked overnight
- 1 can (4 oz) diced green chiles
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic; sauté until soft.
- Add ground beef; cook until browned.
- Stir in soaked pinto beans, diced green chiles, beef broth, cumin, and chili powder.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Season with salt and pepper to taste before serving.
Notes
- Adjust the spice level by adding more chili powder.
- Serve with crusty bread or tortillas.
