Pistachio Cake is a rich and moist dessert with a nutty flavor, topped with smooth cream cheese frosting for a delightful treat.

- 2 cups unsalted pistachios, out of shells
- 2 and 1/3 cups cake flour, spooned and leveled
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 and 3/4 cups granulated sugar
- 5 large egg whites, at room temperature
- 1/2 cup sour cream, at room temperature
- 2 teaspoons pure vanilla extract
- 1 teaspoon almond extract
- 1 cup whole milk, at room temperature
- Cream cheese frosting (for decoration)
- Optional: 1 tiny drop green food coloring
- Optional garnishes such as berries and leftover pistachios
Instructions
- Preheat oven to 350°F (177°C). Grease three 9-inch round cake pans, line with parchment paper, and grease the parchment.
- Pulse pistachios in a food processor to fine crumbs. Measure out 1 and 1/2 cups of crumbs and place in a bowl.
- Whisk together pistachio crumbs, cake flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, beat butter and sugar until smooth and creamy. Add egg whites and beat for 2 minutes.
- Stir in sour cream, vanilla extract, and almond extract until fully blended.
- Mix dry ingredients into the wet mixture, then gradually add whole milk. Mix until smooth, but avoid over-mixing.
- Divide batter evenly among the prepared pans. Bake for 21-23 minutes or until a toothpick inserted comes out clean. Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Make cream cheese frosting and set aside for decoration.
- Once cakes have cooled, trim the tops to make them flat. Frost between layers, then frost the top and sides of the cake.
- Chill the cake for 30-45 minutes before serving.
Notes
- Do not overmix the batter to ensure a light and fluffy cake.
- Grease and line the pans well to avoid sticking.
- For added pistachio flavor, you can sprinkle some ground pistachios on top of the frosting.
- Ensure all ingredients are at room temperature for the best results.
