Description

Pistachio Cake is a rich and moist dessert with a nutty flavor, topped with smooth cream cheese frosting for a delightful treat.


Ingredients

  • 2 cups unsalted pistachios, out of shells
  • 2 and 1/3 cups cake flour, spooned and leveled
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 and 3/4 cups granulated sugar
  • 5 large egg whites, at room temperature
  • 1/2 cup sour cream, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon almond extract
  • 1 cup whole milk, at room temperature
  • Cream cheese frosting (for decoration)
  • Optional: 1 tiny drop green food coloring
  • Optional garnishes such as berries and leftover pistachios

Instructions

  1. Preheat oven to 350°F (177°C). Grease three 9-inch round cake pans, line with parchment paper, and grease the parchment.
  2. Pulse pistachios in a food processor to fine crumbs. Measure out 1 and 1/2 cups of crumbs and place in a bowl.
  3. Whisk together pistachio crumbs, cake flour, baking powder, baking soda, and salt. Set aside.
  4. In another bowl, beat butter and sugar until smooth and creamy. Add egg whites and beat for 2 minutes.
  5. Stir in sour cream, vanilla extract, and almond extract until fully blended.
  6. Mix dry ingredients into the wet mixture, then gradually add whole milk. Mix until smooth, but avoid over-mixing.
  7. Divide batter evenly among the prepared pans. Bake for 21-23 minutes or until a toothpick inserted comes out clean. Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. Make cream cheese frosting and set aside for decoration.
  9. Once cakes have cooled, trim the tops to make them flat. Frost between layers, then frost the top and sides of the cake.
  10. Chill the cake for 30-45 minutes before serving.

Notes

  • Do not overmix the batter to ensure a light and fluffy cake.
  • Grease and line the pans well to avoid sticking.
  • For added pistachio flavor, you can sprinkle some ground pistachios on top of the frosting.
