Instructions
- Prepare the dough by mixing softened butter and powdered sugar until light and fluffy.
 - Add pistachio paste, egg yolk, vanilla extract, and almond extract, and mix until combined.
 - In a separate bowl, whisk together flour and salt, then gradually add to the wet ingredients.
 - Shape the dough into balls and place them on a baking sheet.
 - Bake in a preheated oven at 350°F (175°C) for 10-12 minutes until edges are lightly golden.
 - Prepare the cream filling by mixing additional pistachio paste with softened butter and powdered sugar until smooth.
 - Assemble the cookies by spreading the cream filling between two cookies.
