Description
This Plum Einkorn Cake is a perfect treat to enjoy for any occasion—whether it’s a cozy afternoon snack or a special dessert!
Ingredients
– 2 cups einkorn flour (can substitute with spelt flour)
– 3-4 medium plums (fresh or thawed from frozen), sliced
– ½ cup butter or coconut oil (dairy-free option)
– ¾ cup sugar or honey
– 2 large eggs (or flaxseed for a vegan option)
– 1 tsp vanilla extract
– 1 tsp baking powder
– ¼ tsp salt
– 1/2 cup milk or yogurt (for added moisture)
Instructions
1. Prepare the Plums:
– Wash, pit, and slice the plums into thin wedges. Set aside.
2. Mix Dry Ingredients:
– In a bowl, whisk together einkorn flour, baking powder, and salt.
3. Cream Wet Ingredients:
– In a separate bowl, beat butter (or coconut oil) with sugar until fluffy. Add the eggs one at a time, followed by vanilla extract.
4. Combine:
– Gradually fold the dry ingredients into the wet mixture, alternating with the milk or yogurt. This will keep the batter moist.
5. Assemble the Cake:
– Grease a cake pan and pour in the batter. Layer the plum slices on top in a circular pattern.
6. Bake:
– Preheat the oven to 350°F (175°C) and bake for 35–40 minutes, or until a toothpick comes out clean when inserted into the center.
7. Cool and Serve:
– Let the cake cool before serving. Optionally, dust with powdered sugar for an elegant touch.
Notes
– Add spices like cinnamon, nutmeg, or cardamom to the batter for a warm, aromatic flavor.
– You can substitute plums with other seasonal fruits like peaches or cherries.
