Instructions

  1. Preheat your oven to 350°F (175°C). In a medium saucepan, melt 1/4 cup of the butter over medium heat. Stir in the brown sugar and ground ginger until smooth and bubbly. Pour this mixture into the bottom of a 9-inch round cake pan.
  2. Neatly arrange the sliced plums over the caramelized sugar mixture in the cake pan, cut side up. Set aside.
  3. In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  4. In a large mixing bowl, beat the remaining 1/4 cup of softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  5. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  6. Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined.
  7. Carefully pour the batter over the arranged plums in the cake pan, spreading it evenly.
  8. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for about 10 minutes. Then, carefully invert it onto a serving plate. Let it sit for a few minutes to allow the caramelized plums to settle.
  10. Slice the cake and serve warm or at room temperature. This cake pairs well with whipped cream or vanilla ice cream.
