- 4 medium ripe plums, pitted and sliced (about 2 cups)
- 1/2 cup unsalted butter, divided
- 1 cup brown sugar, packed
- 1 teaspoon ground ginger
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk (or milk with 1/2 teaspoon vinegar added)
Instructions
- Preheat your oven to 350°F (175°C). In a medium saucepan, melt 1/4 cup of the butter over medium heat. Stir in the brown sugar and ground ginger until smooth and bubbly. Pour this mixture into the bottom of a 9-inch round cake pan.
- Neatly arrange the sliced plums over the caramelized sugar mixture in the cake pan, cut side up. Set aside.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a large mixing bowl, beat the remaining 1/4 cup of softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined.
- Carefully pour the batter over the arranged plums in the cake pan, spreading it evenly.
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes. Then, carefully invert it onto a serving plate. Let it sit for a few minutes to allow the caramelized plums to settle.
- Slice the cake and serve warm or at room temperature. This cake pairs well with whipped cream or vanilla ice cream.

- For extra flavor, add a pinch of nutmeg or allspice to the dry ingredients.
- Use ripe plums for the best flavor and texture.
- If you don’t have buttermilk, substitute with regular milk or yogurt mixed with lemon juice or vinegar.
