- 2 lbs chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chopped onion and garlic. Sauté until translucent.
- Add diced bell pepper and cook for 2 more minutes.
- Season chicken thighs with cumin, paprika, salt, and pepper.
- Add chicken to the pan and brown on both sides.
- Stir in rice and chicken broth.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 30 minutes or until rice is cooked.
- Fluff rice with a fork before serving.

- Use bone-in chicken for more flavor.
- Add vegetables like peas or corn if desired.
