Ingredients

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn
- 2 cups cooked rice
- 1 cup salsa
- 1 cup shredded cheese
- 8 large flour tortillas
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat.
- Add black beans, corn, rice, salsa, cumin, chili powder, salt, and pepper. Stir well.
- Layer tortillas in a baking dish.
- Spoon the beef mixture onto the tortillas.
- Top with shredded cheese.
- Bake for 25-30 minutes until cheese is melted.
- Let cool for a few minutes before serving.
Notes
- Substitute ground turkey for a leaner option.
- Use whole wheat tortillas for added fiber.
- Top with sour cream or avocado if desired.
