Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 cups cooked rice
  • 1 cup salsa
  • 1 cup shredded cheese
  • 8 large flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. Add black beans, corn, rice, salsa, cumin, chili powder, salt, and pepper. Stir well.
  4. Layer tortillas in a baking dish.
  5. Spoon the beef mixture onto the tortillas.
  6. Top with shredded cheese.
  7. Bake for 25-30 minutes until cheese is melted.
  8. Let cool for a few minutes before serving.
