Ingredients

Scale
  • 1 cup protein powder (your choice of whey, pea, or soy)
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup chocolate chips
  • 1/4 cup maple syrup (or your preferred sweetener)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the protein powder, almond flour, baking soda, and salt. Stir until evenly mixed.
  • In a separate bowl, whisk together the eggs, maple syrup, coconut oil, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  • Fold in the chocolate chips.
  • Using a spoon, scoop out dough and roll it into balls (about 1 tablespoon per cookie) and place them onto the prepared baking sheet. Flatten each cookie slightly with your fingers.
  • Bake for 10-12 minutes or until the edges are golden.
  • Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Enjoy your protein-packed, healthy cookies!

Notes

  • You can substitute the maple syrup with honey or a sugar-free sweetener like stevia if you prefer a lower-carb option.
  • For a dairy-free option, use plant-based protein powder and non-dairy chocolate chips.
