- 1/2 cup cottage cheese
- 4 egg whites
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 cup milk or milk alternative
Instructions
- Blend oats in a blender until fine.
- Add cottage cheese, egg whites, baking powder, vanilla, cinnamon, and milk.
- Blend until smooth.
- Heat a non-stick skillet over medium heat.
- Pour batter onto skillet to form pancakes.
- Cook until bubbles form, then flip and cook until golden brown.
Notes
- Top with fresh fruit or yogurt for added flavor.
- Store leftovers in the fridge for up to 3 days.
- Adjust thickness by adding more milk if needed.
