Ingredients

- 2 cups grated zucchini
- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1/2 cup honey
- 1/4 cup unsweetened applesauce
- 1/2 cup almond milk
- 2 large eggs
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix grated zucchini, honey, applesauce, almond milk, and eggs.
- In another bowl, combine flour, protein powder, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet ingredients. Mix until just combined.
- Pour the batter into a greased muffin tin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container for up to a week.
- Can be frozen for longer storage.
- Add nuts or chocolate chips for extra flavor.
