Delicious pulled chicken quesadilla triangles filled with cheese and spices.


Ingredients

  • 2 cups cooked pulled chicken
  • 1 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 flour tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat the skillet over medium heat.
  2. In a bowl, mix pulled chicken, cheese, bell peppers, onions, cumin, and chili powder.
  3. Place a tortilla in the skillet and add a portion of the chicken mixture on one half.
  4. Fold the tortilla over and cook until golden brown, about 3-4 minutes.
  5. Flip and cook the other side until golden and cheese is melted.
  6. Remove from skillet and cut into triangles.
  7. Repeat with remaining tortillas and filling.
