Delicious pulled chicken quesadilla triangles filled with cheese and spices.
Ingredients

- 2 cups cooked pulled chicken
- 1 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 flour tortillas
- 1 tablespoon olive oil
Instructions
- Preheat the skillet over medium heat.
- In a bowl, mix pulled chicken, cheese, bell peppers, onions, cumin, and chili powder.
- Place a tortilla in the skillet and add a portion of the chicken mixture on one half.
- Fold the tortilla over and cook until golden brown, about 3-4 minutes.
- Flip and cook the other side until golden and cheese is melted.
- Remove from skillet and cut into triangles.
- Repeat with remaining tortillas and filling.
Notes
- Serve with salsa or sour cream.
- Use any leftover chicken for this recipe.
- Adjust spices to taste.
