- 2 cups rolled oats
- 1 cup pumpkin puree
- 2 cups almond milk
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup walnuts, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix oats, pumpkin puree, almond milk, maple syrup, vanilla, pumpkin pie spice, and salt.
- Add chopped walnuts and stir to combine.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes until set.
- Let it cool for a few minutes before serving.

- Store leftovers in the refrigerator.
- Reheat in the microwave before serving.
