Instructions

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them.
  • Mix the Dry Ingredients:
    In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  • Cream the Butter and Sugars:
    In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2 minutes.
  • Add the Eggs and Vanilla:
    Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Combine Dry and Wet Ingredients:
    Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the Oats:
    Fold in the Quaker Oats until evenly distributed throughout the dough.
  • Add Optional Ingredients:
    If you’re using raisins or nuts, stir them into the dough now.
  • Shape the Cookies:
    Drop rounded tablespoonfuls of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake:
    Bake for 8-10 minutes, or until the edges are golden brown and the centers are set. Be careful not to overbake for that perfect chewy texture.
  • Cool:
    Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra chewy texture, slightly underbake the cookies and let them cool on the baking sheet before transferring them.
