- 1 ½ cups Quaker Oats (old-fashioned or quick oats)
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 1 cup (2 sticks) unsalted butter, softened
- ¾ cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup raisins (optional)
- ½ cup chopped nuts (walnuts or pecans, optional)
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them. - Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside. - Cream the Butter and Sugars:
In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2 minutes. - Add the Eggs and Vanilla:
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract. - Combine Dry and Wet Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. - Stir in the Oats:
Fold in the Quaker Oats until evenly distributed throughout the dough. - Add Optional Ingredients:
If you’re using raisins or nuts, stir them into the dough now. - Shape the Cookies:
Drop rounded tablespoonfuls of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart. - Bake:
Bake for 8-10 minutes, or until the edges are golden brown and the centers are set. Be careful not to overbake for that perfect chewy texture. - Cool:
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For an extra chewy texture, slightly underbake the cookies and let them cool on the baking sheet before transferring them.
- Use old-fashioned oats for a heartier texture, or quick oats for a softer cookie.
- Feel free to get creative and add chocolate chips, dried cranberries, or other mix-ins!
