- 1/2 teaspoon salt

- 1 and 1/2 cups mashed bananas (about 3 ripe bananas)
- 6 tablespoons unsalted butter, melted
- 2/3 cup packed light or dark brown sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 2 tablespoons milk
- Optional: 1 cup chopped walnuts, pecans, or chocolate chips
Instructions
- Preheat the oven to 425°F (220°C). Line a muffin pan with cupcake liners or spray with non-stick spray.
- Mix the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, mash the bananas and mix with melted butter, brown sugar, egg, vanilla extract, and milk until smooth.
- Combine the dry and wet ingredients, stirring gently. Fold in any optional add-ins like nuts or chocolate chips.
- Fill the muffin cups about 3/4 full with the batter.
- Bake for 5 minutes at 425°F, then lower the temperature to 350°F (175°C) and bake for 16-18 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

- For extra flavor, use very ripe bananas with lots of brown spots.
