Ingredients

  • 6 tablespoons unsalted butter, melted
  • 2/3 cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons milk
  • Optional: 1 cup chopped walnuts, pecans, or chocolate chips

Instructions

  1. Preheat the oven to 425°F (220°C). Line a muffin pan with cupcake liners or spray with non-stick spray.
  2. Mix the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, mash the bananas and mix with melted butter, brown sugar, egg, vanilla extract, and milk until smooth.
  4. Combine the dry and wet ingredients, stirring gently. Fold in any optional add-ins like nuts or chocolate chips.
  5. Fill the muffin cups about 3/4 full with the batter.
  6. Bake for 5 minutes at 425°F, then lower the temperature to 350°F (175°C) and bake for 16-18 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
