Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff the quinoa with a fork and let it cool.
  5. In a large bowl, combine black beans, avocado, cherry tomatoes, and cilantro.
  6. Add the cooled quinoa to the bowl.
  7. Drizzle lime juice over the mixture and season with salt and pepper.
  8. Toss everything gently to combine.

Notes

  • Feel free to add other vegetables like corn or bell peppers.
  • This bowl can be served warm or cold.
