Ingredients

- 1 cup quinoa
- 2 cups water
- 1 can black beans, rinsed and drained
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- Fluff the quinoa with a fork and let it cool.
- In a large bowl, combine black beans, avocado, cherry tomatoes, and cilantro.
- Add the cooled quinoa to the bowl.
- Drizzle lime juice over the mixture and season with salt and pepper.
- Toss everything gently to combine.
Notes
- Feel free to add other vegetables like corn or bell peppers.
- This bowl can be served warm or cold.
- Store leftovers in the refrigerator for up to 3 days.
