Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, fresh or frozen
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
- Fluff quinoa with a fork and let it cool slightly.
- In a large bowl, combine black beans, corn, red bell pepper, avocado, and cilantro.
- Add cooled quinoa to the bowl.
- Drizzle lime juice over the mixture. Season with salt and pepper.
- Toss gently to combine.
- Serve in bowls and enjoy.
