Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 1 cup peas
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell pepper and carrot, cook for another 5 minutes.
- Stir in the quinoa and vegetable broth.
- Bring to a boil, then reduce heat and cover.
- Cook for 15 minutes or until quinoa is fluffy.
- Stir in peas, season with salt and pepper, and serve.
Notes
- Quinoa can be substituted with rice if preferred.
- Add your choice of herbs for extra flavor.
