Description

A healthy and delicious dish featuring tomatoes stuffed with quinoa.


Ingredients

  • 4 large tomatoes
  • 1 cup cooked quinoa
  • 1/2 cup black beans, rinsed
  • 1/2 cup corn
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the insides.
  3. In a bowl, mix cooked quinoa, black beans, corn, cumin, salt, pepper, and cilantro.
  4. Stuff each tomato with the quinoa mixture.
  5. If using, sprinkle cheese on top of each stuffed tomato.
  6. Place the tomatoes in a baking dish and bake for 25-30 minutes.
  7. Remove from the oven and let cool for a few minutes before serving.
