Quinoa stuffed zucchini boats are a healthy and delicious dish, perfect for a light meal or side.


Ingredients

  • 4 medium zucchini
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook quinoa in vegetable broth according to package instructions.
  3. While quinoa cooks, slice zucchini in half lengthwise and scoop out the center.
  4. Mix cooked quinoa with cherry tomatoes, bell pepper, garlic powder, onion powder, salt, and pepper.
  5. Fill zucchini halves with the quinoa mixture.
  6. If using, sprinkle shredded cheese on top.
  7. Place zucchini boats in a baking dish and cover with foil.
  8. Bake for 30 minutes, removing foil for the last 10 minutes.
