Quinoa stuffed zucchini boats are a healthy and delicious dish, perfect for a light meal or side.
Ingredients

- 4 medium zucchini
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook quinoa in vegetable broth according to package instructions.
- While quinoa cooks, slice zucchini in half lengthwise and scoop out the center.
- Mix cooked quinoa with cherry tomatoes, bell pepper, garlic powder, onion powder, salt, and pepper.
- Fill zucchini halves with the quinoa mixture.
- If using, sprinkle shredded cheese on top.
- Place zucchini boats in a baking dish and cover with foil.
- Bake for 30 minutes, removing foil for the last 10 minutes.
Notes
- Feel free to add other vegetables to the filling.
- This dish can be made ahead and reheated.
- Use different types of cheese if desired.
