Description
Delicious raspberry chocolate lava cupcakes with a molten center.
Ingredients

- 1 cup dark chocolate, chopped
- 1/2 cup unsalted butter
- 1 cup powdered sugar
- 2 large eggs
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1 cup fresh raspberries
Instructions
- Preheat your oven to 425°F (220°C).
- Grease a muffin tin with non-stick spray.
- Melt chocolate and butter together in a bowl.
- Stir in powdered sugar until well combined.
- Add eggs and yolks, mix well.
- Stir in vanilla and flour.
- Pour batter into prepared muffin tins, filling each halfway.
- Place a few raspberries in the center of each cupcake.
- Top with remaining batter.
- Bake for 12-14 minutes until edges are firm.
- Let cool for 1 minute, then invert onto plates.
- Serve warm with extra raspberries.
Notes
- For a richer chocolate flavor, use high-quality dark chocolate.
- Store any leftovers in an airtight container.
- Serve with whipped cream for extra indulgence.
