Description
A classic dish of red beans and rice cooked together for a hearty meal.
Ingredients

- 1 cup red beans
- 4 cups water
- 1 cup rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Soak the red beans overnight in water.
- Drain and rinse the beans.
- In a pot, heat olive oil and sauté onion, garlic, and bell pepper until soft.
- Add the beans, water, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Cook rice according to package instructions.
- Serve the beans over rice.
Notes
- Adjust seasoning as needed.
- For added flavor, include smoked sausage.
- Can be made vegetarian by omitting meat.
