- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk (400ml)
- 2 cups vegetable broth
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the red lentils under cold water.
- In a pot, sauté onion, garlic, and ginger until soft.
- Add curry powder and turmeric, stir for a minute.
- Add lentils, coconut milk, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add salt to taste.
- Garnish with fresh cilantro before serving.
