Instructions
- Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan with parchment paper at the bottom and greased sides.
- Crush 24 Oreos into fine crumbs and mix with 4 tablespoons of melted butter. Press the mixture into the bottom of the pan and bake for 10 minutes. Let it cool.
- Reduce oven temperature to 300°F (150°C). Beat cream cheese and sugar until smooth, then add cocoa powder, sour cream, and buttermilk, mixing well.
- Add eggs one at a time, ensuring each is fully incorporated. Stir in vinegar, vanilla extract, and red food coloring.
- Pour the cheesecake filling over the cooled Oreo crust. Place the pan in a larger roasting pan, fill with warm water halfway up the sides of the springform pan, and bake for 1 hour and 45 minutes. The center should be set but slightly jiggly.
- Turn off the oven, leave the cheesecake inside for another 30 minutes, then open the door slightly and let it cool for 20-30 minutes.
- Refrigerate the cheesecake for at least 5-6 hours, preferably overnight.
- For the whipped cream, beat 4 ounces of cream cheese until smooth, then whip 1 cup of heavy cream until stiff peaks form. Gradually add powdered sugar and vanilla extract, then fold the whipped cream into the cream cheese mixture.
- Spread the cream cheese whipped cream over the chilled cheesecake and smooth it out with a spatula.
