A hearty and nutritious rice and bean casserole that is easy to prepare.
Ingredients

- 1 cup rice
- 2 cups cooked beans
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 cups vegetable broth
- 1 cup shredded cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, sauté onion and garlic until soft.
- Add rice, beans, tomatoes, cumin, chili powder, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Transfer to a casserole dish and top with cheese.
- Bake for 25 minutes until cheese is melted.
Notes
- Can substitute brown rice for white rice.
- Use any type of beans you prefer.
- Add bell peppers for extra flavor.
