Description
A refreshing rice salad recipe for a light meal or side dish.
Ingredients

- 2 cups cooked rice
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine cooked rice, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the rice mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Use any type of rice you prefer.
- Add additional vegetables as desired.
- This salad can be stored in the fridge for up to three days.
